Hearty Oatmeal Bread



Oat grouts are coarsely ground to make oatmeal, or cut into small pieces to make steel-cut oats, or first steamed and then flattened to make rolled oats. Bet you didn’t know all that! Can’t say I did until I looked it up on-line. 

This recipe uses quick cooking oats (oat grouts cut into small pieces before being steamed and rolled) and makes a sweet oatmeal bread. I serve it at dinnertime or enjoy it, as a snack, with a cup of coffee or tea. 

Ingredients: 
1 ½ cups boiling water 
1 cup quick cooking oats 
½ cup vegetable oil 
1 cup brown sugar 
2 eggs 
½ teaspoon nutmeg 
1 teaspoon baking soda 
1 cup sugar 
1 teaspoon cinnamon 
½ teaspoon salt 
1 1/3 cup flour 

Directions: 
Preheat oven to 350 degrees. 

Combine boiling water, oats and oil. Allow to cool after stirring a couple of times. In a separate bowl, combine brown sugar, eggs, nutmeg, baking soda, sugar, cinnamon and salt. Slowly sir in flour until mixture fully forms. 

Add the two mixtures together. Grease a large loaf pan and add mixture to the pan. Bake for 65 – 70 minutes.
