Gooey Chocolate Cakes



Gooey chocolate cakes are rich, wonderful and perhaps best of all, easy to make. It takes 20 minutes from the time you get the ingredients out to the time you pull them from the oven. Make them anytime you have a need for a serious chocolate dessert. They are also a hit at birthday parties. 

Ingredients: 
4 whole eggs 
4 egg yolks 
7 ounces bittersweet chocolate 
7 ounces unsalted butter 
1/3 cup cake flour 
1 ¼ cup powdered sugar 

Directions:
Preheat oven to 400 degrees. 

Beat the whole eggs and the egg yolks with a mixer on high for approximately 4 minutes. In a separate bowl combine chocolate and butter. Microwave on medium power for 3 minutes then stir to combine. Microwave for another 3 minutes on medium or until chocolate and butter blend. Fold eggs into chocolate mixture. Blend in flour and sugar. 

Pour mixture into four 8-ounce ramekins (I use a deep cast iron muffin pan). Bake approximately 10 to 12 minutes. The center of each cake should remain “gooey” so be careful not to over bake. 


Remove from the oven and let cool for 3-4 minutes. Serve warm with espresso or a nice glass of Graham’s "Six Grapes" Porto. The cakes are also good with a tablespoon of raspberry sauce drizzled over the top.
