Seitan (pronounced say-tan)
is also known as “wheat meat” and is made from gluten or the protein part of
the wheat seed. Traditional seitan
is made from rinsing and kneading the starch out of wheat flour. It is then
shaped and simmered in a broth. The result is a chewy, meat-like wonder that
has a number of nutritional uses in vegetarian cuisine.
Here is my recipe for
making a flavorful seitan dish. I like to serve this vegan delight as is or with
a side of rice.
Ingredients:
¼ cup low-sodium vegetable
broth
3 tablespoons Tamari sauce
2 tablespoons sherry
2 tablespoons dark agave
nectar
1 tablespoon sesame oil
1 tablespoon rice vinegar
1 tablespoon sugar
1 tablespoon grated fresh
ginger
3 cloves garlic (minced)
1/8 teaspoon black pepper
2 green onions (chopped)
2 pounds plain seitan (sliced
1/8-inch thick on the bias)
Directions
Whisk together broth, soy
sauce, sherry, agave nectar, sesame oil, rice vinegar, sugar, ginger, garlic,
and pepper in shallow dish. Stir in green onions. Add seitan. Cover and marinate for 2 hours.
Preheat grill or grill pan
on the stove on medium heat. Drain seitan and grill 2 to 3 minutes on each
side, or until brown and firm.
