This is a treat that our friend Teddy shared with us about 30 years ago in Northern California. It takes less than 10 minutes to make. I haven’t tried to convert it to a more health-conscious recipe because I like the taste of Teddy’s original recipe, sugar and all.
For a more health-conscious recipe, you might try substituting a basket of fresh Goleta strawberries for the frozen strawberries, honey for the sugar and instead of buying Certo, make your own pectin. Ingredients:
4 cups sugar
1 tablespoon lemon juice
1 10-ounce package frozen strawberries
1 12-ounce bottle Grenadine
1 pouch liquid Certo
Directions:
Boil first 4 ingredients for 1 minute. Turn off heat. Add Certo and stir for another minute. Skim off foamy stuff on top. Carefully pour hot jam into five one-pint jars. Wipe rim of jars with a wet, clean cloth. Fix lids, wipe outside of jars clean and process using water bath method.
