This is a traditional nut-bread recipe with
bananas and flavorings thrown into the mix. It is well received by my family
and friends. It makes one large loaf that is best served hot out of the oven
but also freezes well if need be. Either way it is a good way to use over ripe
bananas that might otherwise go to waste. Wish I had thought of this last April.
Ingredients:
1 cup white flour
1 cup whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup oil
1/2 cup sugar
1 teaspoon grated lemon rind
¼ teaspoon rum extract
2 eggs
2 cups ripe bananas (mashed)
1/2 cup walnuts (chopped)
1/2 cup raisins
Directions:
Mix flour, baking soda and salt. In
separate bowl, mix oil, sugar, lemon rind, eggs and bananas. Combine both
mixtures in large mixing bowl. Blend well. Incorporate walnuts and raisins into
mixture. Pour mixture into a lightly greased loaf pan. Bake at 350 degrees for
50 minutes or until done when tested in center.
